Coconut lime matcha

You put the lime in the coconut, add a scoop of matcha, and shake it all up!

Recipe:


  • Ice to fill cup (It will melt, but lots of ice is necessary for a good shake)

  • 1 cup coconut milk

  • Juice from 1 lime

  • 2 tsp matcha

  • sweetener of choice (I use 3 stevia packets)



Add ice to glass. I LOVE my Contigo shaker cup, generally for iced coffee but it mixes my matcha like a dream.

Add scoop of matcha powder, juice lime directly over matcha and ice. Add Sweetener, then pour milk over everything. Close lid or use additional glass, and shake vigorously. Add straw, sip and enjoy!



A healthier matcha drink this week, deviating from much of the traditional fall flavors and sweetness I've enjoyed lately. A little nod to summer in a glass, yet I have no yearning for summer this year. My eyes are on the present and near future this fall, as Halloween approaches. Our heatwave has again subsided and I enjoy the hazy mornings and cooler weather. With Halloween ideas and projects in mind, taking a moment to sit and enjoy is therapeutic as are painting strips of paper mache and adding glow paint to pumpkins.


This past week I have remarked several times how big my son is now. He's a full grown little boy, not a baby anymore. He's independent and so happy to explore and examine things. I feel ready and longing for another again, yet fearful of the process. I see Jack play and socialize minimally with others and want nothing more than for him to have a sibling, a permanent friend.


Still, my afternoon bonus caffeine is a welcome luxury I don't get to indulge in while pregnant. Hopeful and excited for the future, but trying to stay grounded in the now I finish my last tropical-y sip of coconut lime matcha.
